Using Osugi barrels, which are easy for lactic acid bacteria and yeast to inhabit, we have created a strong taste unique to the brewery.
Local brewers such as our brewery are also working hard to make new barrels in order to pass on the wooden barrel culture to the next generation.
The thin and beautiful noodles reminiscent of Japanese soba are made by carefully making noodles based on the domestic wheat flour “Haruyo Koi” with specific ingredients added. Before serving, lay it in a constant temperature and humidity storage and let it mature slowly. The rich flavor of wheat is moderately coated with the aged soy sauce soup, enhancing the overall taste of Chinese soba.
We use Iwachu pork that has been raised in a safe, secure and clean environment and has cleared the specific certification system.
We maintain high quality not only by producers but also by the commitment of long-established butcher shops that purchase carcass meat without vacuum packing.
Homemade Iwachu Char-siu pork has a juicy and elegant flavor.
We carefully selected “Yukiwakamaru” with five-star rice meister and polished rice at a unique ratio.
We cook it with all our heart and put it in a wooden ohitsu (rice tub) to absorb excess water.
Because it is the rice that Japanese people love, we will do our best to provide reliable taste.

Noodles should be cooked in plenty of hot water for 30 seconds to 1 minute.
Boil with your favorite hardness.
For the soup, take out the ingredients in the container, close the lid, and heat it in the microwave at 600W for 2 minutes.
Put the boiled noodles in a warm soup and put the removed ingredients on it to complete.
